CRACKERS/FRENCH TOASTS/BUNS/POPOVERS in One Recipe!!

Buns/Popovers/French Toast/Crackers… Gluten Free & Low Carb

I love this recipe. Tho the bread doesn’t turn out Exactly the same every time depending on humidity, psyllium husk brand and grind. It’s close enough always very good. Even my nieces and nephews like this bread and ask for it. It’s delicious, versatile and filling.

One recipe with many easy variations.
Ingredients:
1-1/4 cup blanched almond flour
5 TBS psyllium husk powder.  Try adding more for a firmer roll/bread, less for a popover like roll.
2 tsp baking powder
1/2 tsp celtic sea salt
3 egg whites – lightly mixed with fork
1 cup rolling boil chicken/vegetable broth, water or
apple cider for sweet bread.

Preheat Oven 350 /Servings 4
~ Heat broth, water or apple cider.
~ In a medium size bowl, combine well almond flour, psyllium powder, baking powder, and salt.
~ Add in the egg whites and combine until a thick dough.
~ Quickly add boiling broth into the bowl and mix until well combined

If have, use an ice cream scoop to scoop dough into buns, works perfectly without messing hands! If you don’t have try two spoons or dig in with hands. I make into whatever size I want. Small buns for snack, larger for sandwiches. Hamburger and hotdog shapes too. Dough will expand 2-3 times. Place on parchment paper lined pan or grease with coconut oil. Bake for 30 minutes. Watch the bottoms so doesn’t get dark.

Variations:
Delicious crisp Crackers – slice firmer rolls (use longer hotdog bun shape if you want less crust crackers but the are good too) thin about 1/8”, lay flat on cookie sheet put in preheated 250 degree oven, bake until like brown, turn oven off, let sit for 30 min.  pull out and cool.

French Toast – slice rolls horizontally then use as bread for french toast.  Delicious.  If you make a larger long roll, pull out of oven before fully baked (about 15 min) the dough will deflate, put back in oven and bake until light brown.  Slice bread horizontally.  This is also great for french bread. Makes a doughier French bread. Of course I found this out by mistake. I put the pan of bread too close to the rack above and when I adjusted halfway through baking it deflated. 🙂

Different Brands of Psyllium husk will change the outcome.
If you buy psyllium husk that is flakier you might need to powder in blender.  Don’t powder fine as the rolls will turn out holier. 🙂
